Sweet Potato Recipes

Sweet potato is, indeed, delicious. Be creative and try some new recipes and different color sweet potatoes.

Creamy Purple Sweet Potato Recipe

Ingredients

  • 1 or 2 purple sweet potatoes (about 10 ounces total), peeled and coarsely chopped
  • 2 tablespoons chopped pecans, almonds, or walnuts
  • 1/3 cup dairy sour cream
  • 1 tablespoon butter
  • 1 tablespoon milk (optional)

Directions

1. In a medium saucepan, cook potatoes covered in boiling water for 10 to 15 minutes or until tender. Drain. Mash with a potato masher or beat with an electric mixer on low speed. 2. Beat in sour cream and butter. If necessary, gradually beat in enough milk to make potatoes smooth and fluffy. If necessary, place potato mixture in saucepan; heat through. Just before serving, stir in the pecans, almonds, or walnuts. Nutrition Facts Makes 2 servings
