Watermelon Recipes

Watermelon Lime Popsicle 2 cups Watermelon (Cubed) 1 tbsp. Agave Nectar 1/4 cup Lime Juice 1 tbsp. Lime Zest Combine watermelon, agave nectar, and lime juice in a blender and puree.  Stir zest into watermelon mixture. Pour mixture into Popsicle molds and place in the freezer until frozen. Enjoy on a warm summer day. Image credit: erinwhitcomb     Watermelon Salad 2 cups Watermelon (Small Cubes) ½ cup Red Onion (Sliced) ½ cup Flat Leaf Parsley (Chopped) 1 tsp Chili Flakes ½ cup Rice Vinegar ¼ tsp Salt Combine all ingredients and chill in a refrigerator for about an hour or until cold. Enjoy with grilled fish or chicken.
